I've tuned my Ineos Grenadier and it's also running larger 34" tires. I've been running LL01 Quaker State Euro 5w40. No complaints there but wondering if I need to shift to a different oil since a lot more power/demand will be coming out of the motor. I've been doing oil changes every 5k miles, manual says 12k intervals with 0w20 but I don't trust it. I'll be heading out to Moab again where it's very hot and won't touch 0w20.

Why not beef up the cooling system instead, QS Euro 5w40 is already has all the relevant specs you would want.
Or just install oil temp gauge with alarm for XXX temperature.

Absolutely no need.

If Ineos B58 has a cooling system, anything like other BMWs with B58, no need to beef it up.

Well per Quaker States website the Euro is no longer in 5w40 and no longer is LL01.

Looks like it's lost a lot of approvals or is a completely different oil entirely so figure it's time to find something else.

I mean are we just at the point where any name brand

I guess I'm not seeing where to choose anything outside of Euro oil. I clicked on Euro and that's what it brings up as my only options.
QS is SOPUS and SOPUS has notoriously iffy websites, etc.
Maybe they are doing some website work etc. As long as the bottle says LL01, you are fine. It is a repackaged PPE 5W40 anyway.

I don't have any atm so was going to order today before a couple big trips coming up. So didn't know if I should just go ahead and consider something else.

I'm thinking of getting a kit from FCPeuro. Then do changes every 5k. There's LiquidMoly, Redline, and Motul. Redline and Motul are group V right? Wouldn't those be the best options?

Motul 300V is Group V.
Get Motul X-Cess 5W40. It is good oil. If you go FCP route. I personally would go to AAP and got Castrol Edge 0W30 that is going for $37 and filter for 5qt.

As a learning novice. What makes a group V superior to a group IV or is that not always the case?

You also have review of all base oil in oil university section.

However, key is final product! 300V is ester based product, but it is racing oil. Additives might not be suitable for longer drain intervals.
Castrol Edge 0W30 in AAP and AZ is 25-50% PAO based. Current M1 0W40 doesn’t have esters, it is mix of PAO and GTL. Pennzoil and QS are GTL based.
