You're saying a 0W is thinner at -40C than others in order to be labeled a 0W. Well if the 0W oil is thicker than a 5W at 0C, it isn't going to be much thinner at -40*. M1 0W-40 is a thin 10W-40.

Being a non-newtonian fluid, no assumptions can be made about the linearity of the viscosity of these oils. At any rate it would be the 5W that would be much different at -40 than 0.
