Thoughts on diet and health

In Southern Maryland some bars used to open at 6am so the construction guys could have steady hands and grab a six pack or pint to last until lunch.

Processed food kills. This is undeniable in 2025. It just takes longer for some than others. Not a belief. Statistics.

Smoking kills.

For some - maybe not all - eliminating grains/grain flours, seed oils, sugar, juices is the ONLY way to metabolic health.

Some things we know with clarity in 2025.
I only eat seeds converted to Jif creamy 😷

As mentioned on BITOG, I recently sustained an injury from degeneration and a relatively low torque event, resulting in a complete tear of the quadriceps tendon on my left leg. The orthopedic surgeon drilled a hole in my patella to snuggly suture the tendon so it can reattach.

Although already a flawed health nut, I am now more obsessed than ever with each calorie going towards healing. Center to this is strict adherence to only consuming certain oils as part of my diet, namely extra virgin olive oil, avocado oil and fish oil.

Going anti-inflammatory is a very good idea. Read labels carefully, as there are now plenty of products which adhere to these principles.

--more fiber (supplement !)
--less saturated fat (drizzle evoo !)
--less sugar (monk fruit powder !)
--quality protein (bison burgers !)
--eat lots of leafy greens (popeye !)

There are plenty of ways for food to still be savory, spicy, tasty.

I also take a rather esoteric matrix of four or five supplements.

Edit: What kind of a bar doesn't open until 11AM--a juice bar? One of my old haunts was open at 6:30 AM and I do love morning drinkers. Tomato beer anyone?
Anywhere there are factories or mills that work a third shift, the bars open early for the breakfast crowd.

Genetics play a major role in health and longevity. I remember my Grandfather's diet. He lived to be 88, smoked till he was about 77, was never over weight and was in great shape. . . He worked full time as a laboror until he was 76. He wasn't in any hospital as a patient or seen by a doctor till he fell and broke his hip at 81. He lived on deli meat (sandwiches) , little Debbies and Duke beer. His breakfast of choice was Little Debbie snack cakes and a beer. He was German and very fond of his beer. I can't say I agree with his choice however. I still remember visiting him in the hospital recovering with his new hip. His doctor allowed us to bring him one can of beer everyday.

Protein and fat. That's the standard American diet. There's an obesity pandemic. I don't think I need a citation here. Just open your eyes. US has a 40% obesity rate. Abysmal. Skyrocketing child obesity rates. Child abuse.

Protein the big scam.

Historically healthy populations.

Potatoes for the win.

Rural Polish and Russian peasants around the turn of the twentieth century ate a diet that consisted entirely of potatoes and brown bread. They worked very hard, under very harsh conditions, and were very healthy.
This sounds like urban myth. Eating a diet that consists entirely of sugar, yes potatoes and bread are virtually all sugar, is terribly unhealthy, even for Russian and Polish peasants.

Huh?

No.

The cause is not that, it's too much of all three, but the standard American diet.............is junk and carbohydrates by far.
.
Watching old American films and television shows readily reveals that very thing. A camera pan of NYC or LA or anywhere USA, really, shows a trim populace during the 40’s and into the 70’s or perhaps the 80’s too. Nowadays? Not so much. FAT FAT FAT!!!
.

No, the SAD (standard American diet) that makes people fat and gives them diabetes is carbohydrates.

Junk science in the 50s and 60s told people they should avoid fats, which caused a mass switch to high carbs. This has caused a devastating effect on the population's health.

Big Mac nutrition: 25g protein, 45g carbs, 34g fat.
4 calories per gram protein, 4 calories per gram carbs, 9 calories per gram fat.

Big Mac nutrition: 406 calories of fat and protein, 180 calories carbs. The standard American diet, fat and protein.

You need to do a little biochem reading, I used to have some thoughts like that, but it goes deeper.

What does the body do with 45g of carbs down the hatch just like that? Think metabolically.

We have to also remember, as an Italian, where carbs are everywhere, it's also from cucina povera. Pasta and potatoes were staples in impoverished communities.
