Healthy eating....or so we thought....

This mixed with EVOO and ACV for my salad dressing base

I'm busting straight past my daily carb limit tonight by eating Bibim gimbab (spicy Korean sushi).
May the payback gizzard strike you down for your dishonest transgression.

My wife loves those. I find them and futo maki unfulfilling. OTOH I used to love inari sushi - now I’m just eating chirashi bowl sans rice.

I don't get indigestion from stuff like that, fortunately and I just checked my BG and it looks like I'm skating by at 130. What makes sushi so great for me is the wasabi, but I can definitely eat alot of it before I'm full.

I just got back from H Mart. Stocked up on Asian groceries... Veggies like daikon and Korean radishes, mung bean sprouts, Napa cabbage etc. Also condiments like various pickles (ginger and kimchi), furikaki (aka Japanese everything bagel seasoning), bonito flakes and seaweed. Also sheets of seaweed (nori) for sushi wraps.

They had boxes of Ataulfo mangos in stock and I was very tempted but knew I would not be able to restrain myself. If someone hasn't had Ataulfo mangos before, they are to regular mangos what fine aged cheese is to Kraft Singles.

That's the one. I just noticed that I accidentally grabbed the kimchi labeled "spicy." This jar is going to last us a while.
Did they have the fresher made “pickles”? Basically longer pieces of cukes in the kimchi spice mix for a week or three. Still crunchy, just below burning hot capsicum but super salty goodness. I used to nod to the lady who made them, but that was at least 10-11 years ago. I don't see them in T&T Asian stores in eh Canada.

I never noticed those before. There is so much in that place that I'm not familiar with. I'll have to look for them next time.

Health report: I had my last drink on January 18th. Almost completely stopped carbs, except sugar in my coffee and tea. Diet high in meat and good vegetables plus some berries. Swimming laps at the exercise center, usually six days a week. I am now up to ten laps a day, which is 500 yards. So far, my weight is down from 190 to 175.0 this morning. I had a glass of wine with the steak on Saturday and will have a cadillac margarita on this Saturday to celebrate my 73rd birthday on Sunday.

Avoiding seed oils as much as possible is part of the routine. I am looking forward to some hiking without having to carry around the extra weight.
