Dealer assured me several times that 10000 miles for normal driving is great. My thoughts are to go with M 1 , a good filter every 5000. Keeping the car forever. Opinions appreciated

No harm in that, except for it being unnecessarily frequent; What is your driving regimen?
Where are you going to find the 0W-8 the crown takes? My dealership parts didn’t even know 0w-8 existed. And was shocked when I told them they don’t have it.

Did you read the owner's manual regarding the correct oil grade?
No need to change out the filter every 5000 miles if you're not changing the oil.
5K OCI's have kept my Prius in great shape for 233K while running various major brand 20-wt and 30-wt synthetics. Zero oil consumption.
I think 7500 miles is the sweet spot. These have a 1.8L engine with a 4.4 qt sump.
I have a 21' Corolla Hybrid. The 23's have more horsepower, but lower highway fuel economy. AWD is available on 23's as a $995 option on the LE trim. AWD cost more on certain other trims however.
Gas mileage is more like 53 MPG, not 55.1 shown in this instance. Yes, cruising down the highway doing 74 MPH at 1500 RPM in an econobox.

Do what you mentioned 5,000 mile intervals and change the filter each time. Mobil 1 is a good choice if that’s what you like. It’s a good oil and will do great in your Toyota.
Daughter in law has a 2008 Camry hybrid, she bought it used with 262K miles on it. Car fax showed 5000ish mile oil changes. I’ve been sticking with the 5000 mile interval. It got Chevron Supreme 5W30 last three oil changes I did on it
I like your idea better than the dealer's.
What are you going to use pertaining to weight --- 0W16 or 0W20 or?????

Often I hear the Car Pro say to drive the car with the base engine first - and if satisfied start to haggle … they want you to fall in love with the next model - and the total cost of ownership escalates
5K OCI with OE filter every 2nd or 3rd service. Cheap insurance.
We have a 21 Prius, so pretty much the same. I do every 10k klms(6k miles), M1 EP 0/20 , OEM filter,and honestly oil still looks pretty good, when I change it. I like the 0/20 , Engine is noticeably quieter, and no mileage hit. Good luck with car, ours has been 100% perfect, and it gets run hard. Most reliable car we have ever bought, and the AWD powers it through the deep snow quite well. 65K klms now, will prob deal it next spring for a new one.

OE filter is cheap, no way I'd leave it.
I would change every 3k with Mobil 0w40 FS
