Fresh from the can is OK. Best is to grind each shot of espresso seconds before you extract (brew).
I'm currently working on 6 blends: Caffe Fresco Ambrosia, Caffe Fresco Daterra's Reserve Espresso, Paradise Roasters Espresso Classico, Paradise Roasters Espresso Nuevo, Metropolitan RedLine, and Metropolitan Soldier Schweik.
All good. Caffe Fresco's stuff needs about 5 days to degas and comes into it best at day 8 or 9. Metropolitan seems to be good on day 3 or 4, peaking at day 7 or 8. Paradise Roasters is real good at day 2 or 3 and hangs in good to day 7 or 8.
I've had 3 double espressos between 5:30 and 7:30.
Grinding, tamping, extracting and drinking espresso. What a life!
