You should be able to find them. Larger grocery store, maybe Asian market, Trader Joes, Whole Foods, etc

Wash, soak for a few minutes, wrap wet in aluminum foil, 400°F for a goodly while (over an hour for a fatty). They are soft, yet crumbly more like a baker, slightly sweet but not like a "yam"
 
Got this big guy ready for the smoker tomorrow. Maybe 4 pounds or so of cross rib beef roast. It got sea salt and Meat Church Blanco for a dry rub.

The plan is pulled beef, so I'll toss it on at 225F and then wrap in some broth or whatever I find at the time.
