Medium rare. Five minutes on each side on the grill, five minutes on each side in the oven at 375, five minutes of resting.
You ever try lowering that oven temp after that hard sear I’d be at a 225F or 250F oven temp just to roast it in just as you were to do a prime rib. It’s just a thought.
They do look good.
 
Today, as I find myself immersed in the embrace of my Homeland (Frequent traveler, rarely home), I have chosen to indulge in offerings of Russian cuisine. Vodka, an Olivier salad with salmon, a beef stroganoff, and a buckwheat accompanied by wild duck.

Old supermarket fried chicken. Not too good reheated but I don’t waste food….I’d get a kick out of it if someone said wild boar from the yard 😆
 
looks good but it looks like Klaus the Possum crapped your beans out.
I should have whipped the natto for a more pleasing texture. Klaus eats only Schwein, potatoes, and Dominosteine, which are not game pieces but gingerbread bites with marzipan and jam covered in chocolate. Just gross. :ROFLMAO:
