That dinner was a "Chopped" challenge. I grabbed 5 ingredients at random for my wife to make into a dinner. Three of those were ground sausage, bell peppers, and onions. She winged it on the dirty rice.

Sauteed 1 cup of rice with oil until golden brown. Poured in water 2:1 ratio, brought to boil, and down to medium and covered stirring every 5 minutes or so just so it doesn't stick. In a different pan, sautee onions and bell peppers (finely chopped) in a little bit of oil. Once that's cooked through, add in 1 lb of ground sausage and cook until brown. Season it with garlic powder, salt, and pepper. Once browned, add to fully cooked rice, 1 can of cream of chicken, paprika, garlic powder, italian seasoning, chili powder, pepper, and Stubb's BBQ seasoning. lol Taste as you go. Then put it in a greased pan and in the oven, covered, at 425°F for 25 minutes.

Homemade chocolate and marzipan. Simple ingredients. My wife used to make all kinds of treats for us. She made a healthier version of peanut butter cups for our son when he was little. I never liked peanut butter cups so I got walnut butter cups.

Basic chocolate: cacao powder, nut butter maple syrup, coconut oil.
A zero carb substitute for maple syrup is monk fruit sweetener. You can use cocoa butter instead or mixed with coconut butter but coconut oil is better for you. You can add powdered milk if you prefer milk chocolate. You may substitute some of the cocoa with carob for a milder flavor. You can add chopped dates, cacao nibs, roasted coffee beans, dried berries, raisins, nuts, chia seed etc. You can make chocolates or chocolate bars or candy bars if you have the proper molds.

Basic marzipan: almond flour, maple syrup, bitter almond flavor, rose water
Again, you can use monk fruit as a zero-carb sweetener. The easiest way is to make marzipan balls and roll them in nut flour, chia seeds, or cacao powder. Put an almond, hazelnut, or pistachio inside.

Homemade chocolate and marzipan has to be kept in the fridge or freezer or it will get too soft. If you go with all-cacao butter in the chocolate it can be kept at room temperature.
