Speaking of natural sourdough vs yeast dough, my grandparents made a killer sourdough bread. Not the very sour SF-style but a milder version. Starter with more lactic acid and less yeast results in a more sour bread while less lactic acid and more yeast results in a less sour bread. That's pretty much all I remember. I'm sure I can find the recipe in Grandpa's library. I remember they used rye flour and apple to make the starter. The apple added enzymes that aided fermentation alongside lactic acid and yeast.
