NY Strip Steak

Take a look at this picture, if you seen these two steaks in the store which one would you buy?

The one on the left looks like it's been dry aged. Should have more flavor and be less tough. Some will judge on the color, where the one on the right has been exposed to oxygen and thus one of the pigments turned lighter. I bet if it's sliced, the inside will look kind of a purple color.

My dad was a butcher so having aged steaks was a treat when I look back on it. I remember having friends over and take one looked at an aged steak and ask what was wrong with them.

My dad owned a meat market … he would bring home round and ground for us … good stuff was sold 🐂
He was good with a tenderizer and mom made great chicken fried steak … burgers on Saturday …
Oh, and lots of yard bird, LoL

My dad owned a meat market … he would bring home round and ground for us … good stuff was sold 🐂
He was good with a tenderizer and mom made great chicken fried steak … burgers on Saturday …
Oh, and lots of yard bird, LoL
How about any liver and onions, that was my dad's favorite and as I got older I would eat a little bit of it but having tried it else where it just wasn't the same. He also liked to take a chuck roast and a pork shoulder and cook them in the same pot, that was really good mixing those flavors together.

The old folks would eat liver … good time for a grilled cheese !
We’d have stew and chili often … Roast was a Sunday dinner thing …

Liver skip the onions med rare you cant beat it. I'll post up some time the biggest tip do not salt till you pull it out of pan and never cook it done.
