How about a pinch of black pepper? I've heard of people adding that to the beans.I've heard of people adding a tiny pinch of salt to the ground beans prior to brewing/extracting. I've tried it, and personally didn't care for the taste.
Haven't tried baking soda though.
I've always drank my coffee black, no sugar. Can't stand flavored coffees either.
