My diet since Christmas has been absolutely horrible. Between the part time gig and my full time job I've been putting in a hair over 80 hours a week for 3 straight weeks. The worst is over, I think. For 3 weeks it's been a mix of fast food and take out mexican and a couple of pizzas with a few things out of the freezer here and there (I'm talking like frozen taquitos and stuff like that). I now remember why I dislike fries and onion rings and whatnot so much.
I finally had a little time to cook so I made 2 things. A big batch of pot roast with veggies and rice and a big batch of enchilada casserole with enough avocado and tomato on the side to at least qualify as 'not just a big pan of tortillas, meat, and cheese'. My intestines are very grateful, they had already begun to go to war with me.
