What are you eating right now?

This morning I fried up two slices of last night's pork loin and had it with a big old pile of veggies. Terrible picture because some filter was on and I couldn't turn it off because my hands were slick with blood. Don't worry - nothing serious. I'm fine. Can't even see the bone.

Today, I'm going to make some classic Hawaiian comfort food in the form of Spam Misubi. It's very simple. Sliced spam marinated in a mixture of sugar, soy and oyster sauce, then pan fried. Each piece of spam goes on top of a playing card sized block of formed rice, kind of like for sushi, except bigger and without vinegar. Then it's wrapped in a piece of nori (roasted seaweed sheets like used for sushi).

Almonds, hazelnuts, and dried cranberries.

I love cranberries! My Grandma used to make "steamed cranberry pudding" as she called it. It was more cake or bread consistency.
Then she made a rich buttery sauce to pour on top.

On our Birthdays, Grandma let us choose whatever cake we wanted her to make. I always chose the cranberry pudding. LOL

After she passed, told my Mom I wish I could have learned how to make it. She said that she had the recipe. It was very vague.
So I waited until fall when fresh cranberries were available. I remember she steamed it somehow, in used large tomato juice cans or something. First time it was OK, but not the same as her's.

So I spent the next 3 or 4 weekends, adjusting the recipe and perfecting. About the 4th time I nailed it. Wrote down my notes on changes every weekend. Now I can't find my recipe and notes!

Gotta get rid of those hardboiled eggs. The white matter that looks like rice is grated daikon. Radish is a natural diuretic. It's also high in K and can lower blood pressure and helps maintain healthy blood vessels.

New York Strip paired perfectly with this beer.
More and more I seek out this cut even over a Ribeye big beef flavor but you better like it no more than a hot rare.
On clearance dinner was about $10.50 with the beer.
After today's activity it's well earned

I still envy those fresh looking tomatoes, this time of year vava!
If I wanted a BLT this time of year, I would make it with canned tomatoes, over the store bought in Iowa.

I use canned tomatoes for stews. I would not want one of those slippery things on my sandwich!
