What are you eating right now?

Two almond flour pancakes with flax meal seed. Served with fresh figs.

2 eggs, ~3 tablespoons almond flour, ~1 tablespoon flax seed meal, ~1 tablespoon inulin, a little salt, and enough filk to thin the batter. I always eyeball the quantities. Into a buttered frying pan. About 2 minutes per side. Total preparation time was under 7 minutes.

Cute little Italian place in Nogales. Everyone super friendly, place is well kept, and the food is very good.

I am preparing a marinated pot roast that I shall finish on Wednesday. I quickly browned the pork loin in a frying pan. Seared it good and browned the fat. Now the roast is bathing in a marinade of stock, veggies, spices, and red wine. On Wednesday I will remove the roast from the marinade, pat it dry, and slow-roast it until it pulls apart with a fork. I'll make a nice sauce with some of the marinade and serve the meat with veggies.

I am currently indulging in a bottle of Weihenstephaner Korbinian. Tofu and veggies coming up for dinner shortly. That's a very late dinner for me but I was just too busy earlier.

Dinner was:
Salad: cukes, tomatoes, bell pepper, lettuce and feta.
Meal: whole chicken leg, whole peas, green beans, carrots, cauliflower, broccoli.
Desert: two carrot muffins, dark chocolate, grapes.
I'm in late 50s, 6', 185 lbs, I don't gain weight :cool:

Got my 1st meals on wheels delivered today. Not bad for $5.75, More like a sealed and heated TV dinner. Did not expect that.

Diced chicken
Sweet & sour sauce
Fried rice
Japanese vegetables
Soy sauce
A fresh orange
Milk
2 fortune cookies
 
This morning I took the pork roast out of the marinade its been drowning in,, patted it dry, and chucked it into the oven for 3 hours at low heat. Tonight I'll finish it.

One hour into slow-roasting
