On something I'm not going to autocross, an opening sunroof is kind of nice for cruising down our country roads. On a used car I would look for one next time as the additional cost is minimal. On a new car, they cost way too much as they are bundled with another bunch of stuff I don't want to pay for, so the Outback doesn't have one.

Should just get a Mercedes E class. Sunroof is standard. The option is whether you get the panorama sunroof or not.

When I get going on my VW project one of the first things is sunroof delete. Cut it out and toss it in the trash, replace with a regular roof section.
The great thing about a panorama sunroof is that it's all glass. No need to wax the roof of the car.
There wont be much roof left to wax. LOL
I always clay, polish and wax the glass roof.
Wow, all these years, like for the last almost 7 years, never did anything to it, just regular car washes and left it alone.
Once upon a time, a sunroof was optional on a Mercedes. Toyota on the first two Lexus models made a moonroof optional equipment on the LS400/ES250 - but getting moonroof also added leather.
And rattles. I thought my Lexus GS lost its strut tower mounts, the rattle became so pronounced; it’s only 6 years old. Turns out toyota/Lexus can’t figure out how to get the mounts and weatherstripping right. my family has had a few sunroofs/moonroofs - 3 volvos, probably half a dozen honda products, and an aftermarket, and NONE have rattled and contorted like this. What’s up with toyota/lexus? Is it a roof problem? A chassis flex problem?
I've actually seen an old LS400 with no sunroof! I think the ES300 was available with cloth and no sunroof throughout the 3rd gen (with corresponds with teh 4th gen Camry). Even the Infiniti I30 was available with cloth and no sunroof. All of those cars are very rare to find without a sunroof or leather, which were usually a package like you said.
I love sunroofs, but no way I am hacking my roof of my current car to add one. I went through that on my previous car, just no way.
I mentioned E class. The sunroof is optional on the C class. Pretty much standard on E and S class cars. Probably optional on other lines too. MB-Tex which is a fake vinyl like leather is standard, real leather is an extra cost option.
bmw guys are rabid sunroof haters and do all kinds of things to delete them. you would think they were thrown out the sunroof when they were babies
i put a slick top e30 on craigslist and my phone exploded in minutes. this was before they would go crazy for anything that ran and drove

I also remember the R107 SL, maybe the R129 had two tops, a detachable hard top and a fabric top. Again, MB-Tex is standard.
I don’t recall seeing a Mercedes without a sunroof, but then again US-spec cars are shipped with that’s deemed popular with buyers unless you special ordered one and/or took the time to travel to Stuttgart or Bremen via the European Delivery Program.
I think you're limited to whatever they allow for the US market so if the sunroof is standard, you can't avoid it. Some S class owners hate it but they're stuck even with European delivery.
