Smoothies

Smoothie #5:

Milk, or nut milk
blueberries, blackberries, raspberries etc
chia seeds
inulin
citrulline
When I've run blueberries through the blender (I've a Vitamix) with milk I get a mixture that starts to jell because of the pectin in the berries. Have you experienced that?

I haven't noticed any thickening from pectin. Wouldn't that require more sugar than is in the blueberries and milk and also heat? I usually add chia, so I get thickening from that.

Here's the thread from my cooking forum that describes the situation (with picture) and a discussion about the cause. If you can't access it, let me know, and I'll send toy the pertinent excerpts and pic.

Interesting. I'll have to do a couple experiments. Maybe I can replicate the effect. Does your Vitamix heat up your concoction considerably? I'm using a NutriBullet.

I didn't blend it long enough to generate lots of heat. But I don't recall exactly how long the machine ran. For things like smoothies I generally run for about 40-seconds.
