Kim Chi !

Just the other day I came home from a 12 hour work day... dead tired and didnt even feel like spending much time cooking. So I cooked up some Brown Rice and tossed a handfull of fresh Spinach leaves in to cook with the Brown Rice... I sliced up some Pineapple and some Kimchi...... When the Rice / Spinach was done I put the Pineapple and KimChi over the Rice/Spinach with a single Serrano chili...... Tasted great. The Hot Rice/ Spinach combined with the Cold KimChi / Pineapple and the sweet Pineapple complimanted the Spicy KimCh and chili Pepper.... Somehow it all seemed to work well together.... Didnt take a whole lot of effort for a nutricous quick meal.
 
That one turned out to be a nice suprise.... I didnt intend to do that..... I was just to tired to bother with much but I was hungry , so I just started and it sort of ended up with that.... I think I will be trying that again sometime.
 
My parents go through withdrawal if they do not eat Kim chi at least once a day.

And when it gets really sour, you rinse it, fry it and make a stew out of it. Kind of like hobo stew, you throw all the leftovers in a pot fry it up and and add some water. If it is too sour, put a spoonful of peanut butter takes the edge off and give the stew a smooth texture.
 
^^^^ Oui? never heard of that. sounds interesting. Man, my friend and his japanese girlfriend came over for 5 days. And ate all of our kimchi

I was brought up eating Kim Chi and grew out of it in my teens. my Mom always hade 4-5 jars going at a time. I'm not sure if I would like it today. Vietnamese nuoc mam seems to create the same reaction and division of opinion in people.

The most pungent thing I can remember was a Vietnamese fish paste (not sure of the name). This grayish brownish paste was made from fermented anchovies with other seasoning that could drop a man faster than a stun gun.
 
I'm a big kim chi fan. A Korean restaurant near me has sushi rolls with kim chi. They're delicious. They also serve it hot in a stew with pork, tofu (which I ask them to skip), and a spicy broth. Kim Chi ji gae (sp?) is what it's called I think. It's also one of my favorites.

And yes, the gas, if concentrated enough, could be weaponized.
 
This is an old thread but a good one. Love kimchi, Ive bought jars of the cabbage in the slightly spicy red sauce. We love going to Korean restaurants, and getting 10 or so small dishes of stuff, all of which I believe is generically referred to as kimchi.

I think Ill get some Korean food very soon because I saw this thread!
 
I was stationed in South Korea for 2 years and ate Kimchi everyday. I was at Camp Casey and there was a nice Korean place called O'raes where it was all you can eat for 10,000 WON. You sat on the floor and got your food raw and you would cook it right at your table. And they had many different types of Kimchi not just cabbage. I sure do miss the South Korean food wish I can go back and visit for awhile to eat, eat and eat.
