IMO, his comparisons are "suggestive" at best.
Without so much as a thermometer, much less a standardized heat source, timer, etc., his tests are pretty much scientific garbage.
Yes the guy variates the flame distance to glass a lot, some are almost touching the lab tube others are farther to the tip of the flame (hotter). He says the temperatures are between 103C and 107C, right. With all that boiling, the oil get beyond 230C easily. Some more stressed are in the vicinity of 300C.
