Coleslaw!

While on Christmas break my brother made amazing coleslaw with just red cabbage and some olive oil and vinegar. Was amazing and everyone raved about it. How do you make yours? Or do you buy it?
 
I never cared for slaw until work had me staying at a remote lodge that had a salad bar with sweet and sour cole slaw. As best I can recreate it, it was chopped slaw mix from the grocery store with a sauce of brown sugar, vinegar, a splash of olive oil, and seasoned with celery seeds. After making, it needs to sit for a few hours to let the flavors all get acquainted.

A guy at work made an interesting peppery slaw with chopped cabbage and thin sliced bell peppers, Kraft mayo, and seasoned with coarse black pepper. Unconventional but surprisingly good.

A lot of the bought slaw seems to have horseradish in it which I don't care for in slaw.
 
My version uses cabbage and carrot with a homemade sauce of Duke's mayo, vinegar, and sweetened condensed milk seasoned with salt, pepper, and celery seed. Finely shred the cabbage and carrot, blend together with the sauce, seal it, and in the fridge for at least 48 hours.

When asked - he said gotta use Duke’s (I do) …

I put pineapple in mine. I've been trying to use low fat Greek yogurt over mayo to cut down on the high fat normally associated with coleslaw. Can you post the recipe?

Duke's is the only acceptable answer. There is no other mayo.

I will give up many other foods, of equal fat content, before I substitute Duke's mayo with Greek yogurt. :)

Eh I tend to cut it half and half. It gives it a tangy flavor. It's worth a shot.

40 years ago single me used to buy Duke's because it was the cheapest mayo. However, Spousal unit wants the jar to say "Real Mayonnaise" on it. Forced a real life adjustment on me. ;)
Now Duke's is a major name brand and doesn't cost less than the "Bring out the Best brand".

I keep seeing Kewpie mayo in the weird creepy bottle becoming popular. I like the mayo made with Avocado oil. Less fat tastes slightly different but not so different as regular vs diet soda.

I like Kewpie too! It used to be you only found it in Asian markets. It's a Japanese style mayo.

What's the best oil for it? If olive oil, do we get Virgin, Xtra Virgin, XXtra Virgin? California, Italy, Spain, N, Africa sourced? Is it really olive oil or are the tin hats correct that it's a Mafia plot selling you mislabeled soybean oil (Please, please, seriously, don't discuss olive oil fraud plots, it's divisive, political, and sometimes religious too.)

Clean Sump Oil works best

But yes is mayo, Duke's

If oil yes EVOO. The kind that is peppery.

Try it with exotic vinegar!!

Never thought of adding chopped kale. Good idea
Have you ever made Hawaiian coleslaw? It's worth a try.
