I love corn on the cob.
But I wanted to diversify and made a corn salad.
2 ears corn in the husk microwaved, I shorten the husk with a knife. Strip, Butter
1/2 diced red onion or Vidalia
2 tsp minced garlic sauteed for seconds in olive oil
Optional - diced cucumbers, sauteed diced zucchini
Vinaigrette - you need an oil and an acid which can be lemon, lime, white/golden balsamic vinegar or lemon or lime with the golden balsamic vinegar, add 1 Tb honey, and seasonings, Italian or Mediterranean, finely chopped basil if Italian, Rosemary if Mediterranean, stripped oregano leaves.
