What are you eating right now?

I dry brined a ham overnight and went in the smoker for 10 hours today with apple wood. I made a peach sweet tea glaze (sweet tea base with dark molasses in peach whiskey, reduced to a glaze) which coated the ham for the last hour. Served with it is seared cabbage, black eyed peas, and cornbread. The ham came out farking amazing!

Pot roast in the oven.

Was over at a friend's the other night and he served brisket from the oven. It was fantastic!! He was curious what my opinion would be as I am able big fan of the smoker. Regardless, it was great and it inspired me to change things up a bit.

Tonight we are having some friends over so I dry brined a 5 pound round roast 24 hours. A light sear on all sides and laying on a bed of potatoes and carrots. I'm using a cast iron Dutch oven my wife got me for my birthday.

I started out at 225F to being things up to temp and just put it to 250. Will see where the day takes me.

We just cooked almost the same exact dish two days ago. The veggies holding the meat off the bottom usually helps it cook really well. Mine made a nice dark thin gravy. So I stirred in a couple spoons of flour + smoked paprika to make a thick brown gravy to finish it off with. After we seared the roast we put it in oven @ between 325-350dg for about 1 1/2 hours. We have also cooked same dish but used chicken in stead of beef.

The pot roast turned out amazing. No pictures though.

@SammyChevelleTypeS3 you are correct, raising the roast off the bottom really evens out the cook. I had gradually raised the temperature to just over 300F but it cooked a bit quicker than anticipated. It was done close to two hours ahead of time.

I also made a nice gravy from the drippings. My family loves homemade gravy, that's for sure.
 
I went out with some friends yesterday for a New Year’s Day dinner in Niagara Falls at an Indian restaurant. I had butter chicken with rice, vegetable pakoras and naan bread. It was such a delicious meal but very filling! I plan on a 16 hour fasting after that meal.
 
Back on the hospital food tonight.
Probably about like my nursing home food. Most was not good, but once in a while they hit a home run.
Every one got the same food for lunch and dinner.

Breakfast was their shining star. You could request about anything. If they had it in the fridge or cupboard, they would
make it for you. I became friends with all the cooks. I was the only one that ate in the dining area. All the others had
food delivered to their room. I am not much for TV watching and would rather chat with other people. Most of the days
I hung out at the nurses station and joked with them.
 
Your egg pics make me HUNGERY!! I'm fasting here man. It's a fad, but I'm fasting everyday for years now. HUNGERY!!

Seriously I do agree with you on resistance/weight/low aerobic for better blood sugar control, and hard aerobic for heart and circ health. My pump class is deadly harsh. Yoga lady shows me which muscles I need to loosen to get more pretzelike and senior aging instructor - she is a master of knowing and getting to every muscle in the human body - and she is pushing 80+ (that class is not as easy as you youngsters might think!!)

Pickleball people never guess my age, and I need to be careful sometimes. People starting to notice I like to play with certain ladies. 3 times a week 6:30AM-8:30AM, started yesterday for the indoor winter 2025 - REALLY helps with fast twitch, agility and controlled power. One game, Fiona and I (she's GOOD) were down 3-10. We stepped back, took a breath and set a little strategy. We rallied all the way back to win 12-10.

Speaking of brain health, and sexy women, wife and I play Scattergories, Scrabble, etc every night starting around Christmas. Just this little time has sped my mind up on NOUNS. These are the first to go, you geezers. Use games, reading, dealing with others to clear the mind and be quicker.

I'm just saying this once, 2025 to get it off my chest.
