Bacon grease

Many of those support the boys programs were really just feel-good propaganda.. Little actually got used. After the war ended there were huge piles of steel and aluminum that were collected to "support the war effort/support the boys abroad" that was never used because the composition was too varied and impure to bother with. Pans were never turned into tanks and airplanes. I wonder if any bacon grease got used to make anything.

Soap, maybe.

I cut a pound of bacon in half { easier to manage half slices in the pan } and I use a bacon press. It fries faster and more evenly and eliminates those curly disgusting raw ends. I have paper towels ready and lay the cooked bacon slices on the towels then press them down to get as much grease as possible then flip the pieces and repeat. They’re 90% dry and perfectly crisp when I plate the pieces. We do have a small SS bowl with a cover that we store the refrigerated grease in for seasoning dried beans, collards, etc.

What is the pink stuff next to the greens?

My mom used to keep a Maxwell House can of it sitting next to the stove. My dad's been a heart patient since he was 54. Stroke at 86. I'm well-entrenched in the camp that believes bacon is one of the most perfect foods, but I don't keep the drippings around. Real butter, avocado & coconut oils are my cooking fats.
