What are you eating right now?

Roast on the Traeger. 225 for 4 hours, the 260 for another hour. Pulled at 135. She is wrapped with some beef broth in the oven to finish.

Was visiting my buddy today, it is his kids that raise these beef for 4H. He's a rancher and one of the local vets. He knows how to feed and take care of an animal. He likes to grill as well so he is happy to see the end product.

English "Pizza" Muffins: Yesterday I made a pasta sauce using whole Calabrian peppers packed in olive oil. I used a pepper and some oil, along with fresh and roasted garlic, to make the sauce which I used on the English muffins this morning. Reggiano was generously grated over the concoction and then toasted and browned in the countertop oven. Beverage of choice was Nepalese Himalayan Black tea.
