My first meal today. Chook thighs over baby spinach, kale, and chard. Two very orange-yolked eggs over riced cauliflower and peppers. I don't fully cook veggies that don't require to be cooked all the way in an effort to preserve the majority of enzymes and nutrients. There's only half of the choc left. I ate the other half yesterday. Yes, I do possess a modicum of self-control. :sneaky:



These gratuitous pictures show the sad state of supplies at the beach shack. At least I have plenty of almond flour. I need to go on a restocking run. The next grocery store is a few miles away and places like Whole Foods and Trader Joe's are at least an hour away. Amazon to the rescue!

I had sockeye for dinner. Very simple. Baby Yukons with rosemary, thyme, salt, pepper, onions, carrots, and the fish with lemon herb topping (butter, spices, herbs, lemon, and panko). - shoved the lot in the oven. Plus a salad. 5 minutes prep and 12 minutes in the oven. Quicker than takeaway or delivery.

What temp were you cooking at, to have all that done in 12 minutes?

While I was prepping the fish with the topping and while I was putting the salad together I was nuking the potatoes for 4 minutes to par-cook them. That way I could bake everything together at 400°F for 10 minutes plus 2 minutes under the broiler.

I generally don't spend much time on cooking. My fridge is full of things prepped in bulk to be used over the next few days. Much of my cooking revolves around assembly of things ready to go. If I had to constantly peel and dice onions or wash and chop parsley I'd be very inefficient. I also don't care about presentation and I don't waste time on that.
