What are you eating right now?

Yesterday I made a low carb spaghetti using a marinara sauce with no HFCS and considered low carb, some frozen Italian meatballs from Walmart and shirataki noodles.

It turned out pretty good. One thing I learned about the shirataki noodles after I was done is that that should be cut before adding to the sauce. They ended up clumping in one mass. Kitchen shears took care of that issue.

The result was that my fasting blood sugar this morning was about 30 points lower than it has been lately. Walmart sells the noodles for much less than other stores. They are in the produce section.

Dumpling Takeaway for Lunch
Close to home and near my doctor's office, it seemed like a nice meal option. Its been quite a while since I visited.

I ordered the Green Chive with Pork and Shrimp dumplings along with their Shredded Potato Salad, which, by the way, was as outstanding as it was unusual ... just a nice bit of spice and an excellent compliment to the dumplings. It was fun to watch them make the dumplings while waiting for the order.

Apple cheesecake for lunch! I made it last night after my atrocious dinner. I used strained yogurt to make the filling. The shortbread has a lot of walnut flour in it, hence the dark color. I don't have my regular spring form at the beach shack so this cheesecake is not very tall.
I will soon make a gooseberry cheesecake that will make Pablo's colon explode. :ROFLMAO:



It's not sitting bareass on the placemat.


Why is one slice never enough? :unsure:
