Avocado Toast
I never tried it before, and there was this great 'cado sitting on my counter that I'd otherwise not get to until tomorrow. So I toasted up a multi-seeded ciabatta roll and spread half of the fruit on it and had it for breakfast. Well, I'm going to do that again! Very good.

Thanks to @Pablo and @#18FAN for posting so many pics of their avocado meals and for giving me the impetus to try this.
 
2 hard boiled eggs with Cholula brand “chili garlic” sauce. Half avocado. Other half will be my snack for work tomorrow.


Smoothie of moms homemade peanut butter, kale, Fuji apple, chia seeds and flax seeds ground up. Celery and low sodium v-8. Tasty. Had 8 oz of this. Other part will be part of salad and lunch tomorrow
 
What is this tasty treat you ask? Wholesome chocolate pudding? Good heavens no. I call it Savory Healthy Intenshly Tasty. This is an eclectic yet delicious mix of chopped dates, PB2, whole almonds, chia seeds, pumpkin seeds, sunflower seeds, blueberries, inulin, cacao powder, and filk (fake milk). Sometimes I put it in the blender and make a smoothie.

 
Spicy Tofu and Zucchini Stew
This is essentially a Korean dish made with a dashi base,
tofu, zucchini, Napa cabbage, onions, and scallions with
doenjang (fermented soybean paste), gochujang, gochugaru
(although we used Aleppo because it was handy) and ginger,
and garlic. We made this at my friend Margaret's place. She's
teaching me some simple Korean dishes, and this one comes
together in about half an hour. Her two kids love it, and
as a busy mom, she does, too. I love its simplicity and spiciness.

Korean food is good. It can get spicy. Clears my sinuses right up. I like the hot clay pot, ttukbaegi, on a cold day. When is your illustrated cookbook coming out?
