Cooked. Lion’s Mane Mushrooms. About the only fungus I truly go stark ravenous for. Amazing flavor and succulent almost sweet meat flavor. Ate with smoked salmon, olives and Cole slaw

Freeform almond flour pancake made with almond flour a little oat fiber, eggs, filk, chopped walnuts, pinch of salt. Served with a little maple syrup and blueberries. The only tricky part with grain flour-less pancakes is the lack of gluten that make the pancakes hold together. Almond flour pancakes are a little tricky in that regard. The mixture has to have the right consistency and you can't make the pancakes thin like crêpes. Or you could add a little xanthan gum which with long-term use is inflammatory. I'd skip it and make a thicker pancake instead. You can add a little inulin to the batter which will help the browning process.

I haven't seen lion's mane around here. Maitake and king trumpet have became super-popular in recent years. Even the large chains carry them now.

They sell sporulated logs of all different kinds. Don't leave a log in the dog kennel!

They say chuck it in a shady moist spot......some are better under oaks, some firs, pines.......I would like to try and if growing on the log and looking like the claimed variety I would have a bit of a smaller chance of complete organ shutdown, or melty runaway insides. I could be a crazy viking for 1-3 days. That does sound fun.
 
Better, and morels are good. But fungus is a personal thing. Most mushrooms are not for me, frankly.
Wow...better than morels? Wish I could try them!

One year I found a spot on the MO River that was loaded with morels. Ended up picking five, five gallon buckets of them in one day!
Was calling friends to come get some. Dehydrated enough to last several years for cooking in winter.
