The ribs are spiced and ready for the Traeger tomorrow.

So after I removed the skin on the pork belly, I found it a bit thin in places so to compensate I will maybe do a 5 day cure as opposed to 7. This is my first go at this and first go at working with pork belly.

No fan of truffles, never had them before. I did see them used on the awesome "Greedy Italians" videos, and those chefs live truffles.

Homemade omelette with mushrooms , cheese and ham. Not huge on omelets but oh well. It’s good just wasn’t what I wanted. I was looking forward to a good chicken biscuit from Hardee’s or steak biscuit. But I’m not paying for it and I hate driving so I’ll take what’s provided lol.

Hotdog with just relish. It was from a hot dog guy in front of Best Buy. It’s a beef hotdog though . Don’t get me wrong I love beef but not in hotdog form. I can’t do beef hotdogs. There is just something about them that makes them nasty. I can do regular hot dogs though. But they were good and I try to support the small guys.

I agree, hotdogs need some pork in the mix as well! I will eat a beef hotdog, but they are not as good.

Last night... smoked pork loin with sweet potato and side salad. My homemade BBQ sauce as well.

The loin was rubbed with a Memphis dry rub I made. Smoked at just 170-180F for a few hours and pulled at 145F internal temp. So juicy and delicious!
