What are you eating right now?

For breakfast I had Chorizo con huevos, pinto beans and flour tortillas, The closest to homemade tortillas are the Tortilla Land brand, they bubble up just like grandmas and taste just as good.
 
Last night I tried a new omelet recipe.

Heat skillet with a little avocado oil and lay down a bed of shredded cheese, just enough to cover the bottom of the pan, let it heat until it melts a bit then add your egg and let cook, then I added some more cheese, diced jalapenos, yellow bell peppers and some cooked Jimmy Dean original sausage. Fold over and cook for a bit and then flip for a bit more. Makes a crunchy omelet.
 
Few of these as picked up few jars at Foodland. The Erdinger I’m enjoying now.
