I wouldn’t either (as a Canadian). It looks really interesting driving south but there are so many things that could go wrong. Lots of borders to go through, people to rob me, etc…if I spoke Spanish maybe I’d feel marginally more positive about it.

It isn't safe for Spanish speaking people, nor people native to Mexico and Central America either. Just not a good thing to do these days.

I made lemon pepper chicken last time I cooked.

Maybe try something easy like meatloaf. Add mashed potatoes and you can cheat with packaged gravy. It makes great sandwiches too.
