What are you doing right now?

Good steel is better than poor, but even really high quality chef's knives aren't made extremely hard otherwise they chip or crack under hard use. Just as important as edge retention are toughness (also called ductility) and strength. The harder you make steel, the more brittle it is.

My favorite way to keep kitchen sharp is with a diamond hone and a good steel. A few licks with both every week or so is usually all it takes.

I got into knives and knife sharpening during the pandemic. I probably know more about knife steel than I know about my last two divorces. Funny I can't find any kitchen knife that I'd like to buy. My googling skills probably need to be sent to night school.

Well, we took the brood ice skating and one of them, trying to show off, sprained his ankle pretty and got a neat gash on his cheek.. So we didn't get to see Nosferatu but Nurse Ratched instead. After the kid got patched up we went back to my parents' house and now the brat is wallowing in misery while also hoping that his mates and especially the girls will be impressed by his grave injury. And his brother is jealous. I'm going to have a drink.

A few days into January he would have been 93. Thanks guys. He was an AF vet, stationed on Okinawa during the Korean war. Then in Colorado where he met my mom when she was in college from CA. He smoked up until 40, quit. He had COPD/asthma later but kept going. Stubborn old guy.

I saw his ECG last week, even to me it looked not good. His Troponin I was 118 and not dropping.

I worry more about my mom. I am sure she will be looking for him. Asking. Not remembering. That sucks. Dementia has to be the cruelest disease for the elderly (cancer is its younger pal). Heart disease just laying around on the couch.

I just left an accident scene on my way home. Somebody in a little SUV or minivan crossed into my lane at a low rate of speed, but I was able to avoid a head on commission by serving over so they passed me on the right shoulder. Other cars behind me were able to get out of the way away as well as the wrong way driver scrapped along a guardrail. It was like the other driver was losing consciousness or were so drink they were falling asleep. They made it about a block before going off the road and coming to a stop.

Police and aid were on the scene in a minute as it was almost in front of the town fire department. A bunch of witnesses had stopped by the time I got turned back around so the officer just waved me on.

If they had been going a bit faster, I would have gotten creamed, for sure.
