Try a titanium cutting board. It's gentler on the stainless than wood or plastic.


Hard to believe. In fact, I just had three tequilas, and it's still hard to believe. I'm talking very good tequila here.

None of my other knives, used on the same wooden cutting board, have such poor edge retention, and some of them are cheap-o grocery store knives.

Maybe you got a knockoff knife. While stainless has relatively poor edge retention, mine do okay. I only sharpen them properly every 6 months, less often than I sharpen my tongue.

Speaking of cheap. I found a small saucepan on the beach. Stainless, USA-made. Wife said it had likely dog feces or worse (like what?) in it. I cook with it all the time. My wife refuses to eat stuff that was cooked in it. If only she knew.

When I was a kid, I thought "surgical steel" on a Swiss Army Knife sounded pretty darn good. In reality, it is crap.

To get back to the point, I want a premium steel kitchen knife that has good edge retention. Japanese kitchen knives are good, but sometimes not good enough and sometimes the wrong size. It seems that everybody swoons over an 8-in. chef's knife. I guess size matters. Who knew?

The DIN 1.1410 steel Victorinox uses for the blades is excellent for the application. I think you may want a proper chef knife with a carbon blade but there will be inconveniences in usage. As for the titanium cutting board it is less rough on stainless than wood and it's more hygienic than any other cutting board material.

Good steel is better than poor, but even really high quality chef's knives aren't made extremely hard otherwise they chip or crack under hard use. Just as important as edge retention are toughness (also called ductility) and strength. The harder you make steel, the more brittle it is.

My favorite way to keep kitchen sharp is with a diamond hone and a good steel. A few licks with both every week or so is usually all it takes.

I'm working. Hoping it will be a quiet day. I used to work at a financial company so we were open when the markets were open, and I'd usually work the days like Friday after Thanksgiving/Christmas Eve/New Year's Eve since I didn't have any kids and most of my team did. I didn't see a need to take those days when I knew that the people with kids had things they wanted to do. I don't work in that sector any more, but I keep the habit because most of the people I deal with will be off so I usually get a lot done with no or little interruption.
 
Computer shopping. If my home pc is getting old, it might be time for a spare. Stuck at MIL’s so might as well do something productive.
 
It’s Boxing Day here in Canada so I’m definitely avoiding the malls today! They will be packed with people looking for bargains (and there really aren’t many deals to be had that weren’t already there on Black Friday)

The fam headed out to do that. At one point my wife realized that she was assuming that I didn't want to go, and made sure to extend the invitation. I like to think my returning glare was done in a loving way... probably wasn't.
 
Just got done with my 3 mile morning walk. Windy and rainy....typical for around here in the winter. Ate three hardboiled eggs and a bunch of smoked salmon for breakfast. Won't eat anything until dinner (leftover prime rib) at 6:00. On a 2MAD, carnivore eating regime.
 
Found a computer identical to the one I have... means parts should swap, right? Easier to keep at least one up and running when all the parts are the same. Also found a 2n1 tablet of the same generation, only dropped 4 times, and priced as such. Tempting...

Found out that my neighbor died last weekend. Obviously we weren't close... but I had been meaning to visit more often. So much for that.
 
I’m at work but we are out of work. Most of the shops are closed today and tomorrow as well. My buddy that’s a Ford tech in my town they are closed rest of week and my other mechanic friends too. I’m ok with that being out of work and a firm believer that we shouldn’t have to work this week because technically it’s still Christmas. I’m anxiously tracking my Apple Watch and waiting for it to come tomorrow. It’s getting really boring setting here but at least the boss isn’t here so it’s chill.
 
We are about to take the kids ice skating. Then we will go see Nosferatu. Christmas and vampires - a perfect match! Does anybody here love The Fearless Vampire Killers (1967) as much as I do? I must read Salem's Lot again.
