Vinegar: which ones do you folks use for cooking?

I mainly use a balsamic to make olive oil and vinegar dressing for my spinach and kale salad. Local place across the river that been around 60 years has a lot of varieties of them as well as olive oils.
 
We don't cook much with vinegar, we use it more as a condiment for salads. Our usual go to is a white condiment often referred to as white balsamic, but white balsamic doesn't exist and traditional balsamic vinegar is dark as you already know.

This is what we have on hand right now:
 
Cider vinegar in the crock pot with pork chops. Add onion, cinnamon, clove, salt/pepper, brown sugar, cover with sliced apples and raisins. Some water and low and slow for about 4/5 hours.

I don’t cook much with vinegar. I do make oil and vinegar dressings.
White Vinegar: General purpose, cleaning, and laundry.
Balsamic Vinegar: Salad dressing and fish condiment.
Apple Cider Vinegar: Salad dressings.
