I agree completely, the difference in viscosity is so small. The viscosity that most people really seem to want here is 10w-400w-20 would work just fine, I too don't see a need for 0w-16 Valvoline Restore and Protect.

Must be new, I don't see it on the listed ones but under the FAQ it states 0w16 as an available grade.
