Just use ESP X4 0W-40, it is much better for this use than the ESP 5W-30. It is not much thicker, 0.3 HTHS, but it is preferred in 911 for a reason. I'm not sure what the concern is.I think the plan is to just run it until 5k miles or if I have an autocross or track day, then switch to a C30 (probably M1 5w30 ESP Euro) before the day.

It's just CAFE nonsense. I have been running it or similar in a car that came with 0W-20 for 2 years now.Yeah, price difference is $60 vs $120 so not a big deal either way.
Interesting caveat Mobil put:

It is a C40 oil.
Drive a porsche like a porsche and you're good with C40. Drive it like a church lady to costco and back and you're good with C20. C30 is a reasonable compromise between the two.I have the 2021 Cayman S. Motul is a C40 spec oil which is what the car calls for.

Not entirely sure what Audi is doing but I’m pretty sure you’re going to see C20 and C40 exclusively for Porsches until C12 becomes a thing. I just don’t see where C30 fits. Funny thing is Audi has a Porsche designed V8 engine and they spec 504 / 0w30 in theirs instead of 511.
Porsche stops with speccing C30 on the Cayenne V6, they don't spec it for any V8 that I'm aware of, just C40 which is analogous to 511 / MB229.52 and quite a lot of oils speccing one spec the other two.
I think they're like "we are using 0w20 and 0w30 for all our other cars, we don't want to make our dealerships carry inventory of a barrel of 0w40 511 oil just for the very few v8 cars they'll get for service". It’s Porsche A40, usually use in my 718 GTS but I just had that oil changed. Might as well use it on this EA839 v6 turbo.

0W30 will give you more protection margin. Pushing vehicle, towing etc.I have a 2018 Audi SQ5 with this engine. I’ve been using Amsoil’s VW508 0W20 oil in it since it came out. With 133,000kms, the engine sounds and performs like new and uses zero oil over a 8000km OCI. Mileage is great at an average of 9.18L/100km. I’ve also done a couple of UOAs on this car, all coming back great. I live in northern Canada (Edmonton), very cold winters with this car being a daily driver. I have been concerned about the possible rocker arm issue as my car’s build has this flaw (nothing yet)
I’ve been thinking about going to Amsoil’s C30 0W30.
Most advice I’ve seen is to stick with what works. I’m not sure what to do?

I’d probably switch to C30 or C40 although given your extreme winter climate maybe the average C30 is better for the top end on those incredibly cold starts.
