Salt, pepper, garlic powder.

I salt the steaks, heavily (solid layer of kosher salt) and let it sit out anywhere from 20-45 minutes with the salt on it until it about hits room temp. Rinse off salt, dry and add pepper and garlic powder. Cook either on the grille, or in an iron skillet (start on the stove, finish in the oven). Makes it pretty much foolproof.
