Replacing entire house of Galvanized with PEX-DIY or not?

girlfriends well water puts holes in her old copper pipes + her departed water likely put sediment in the piping causing poor pressure. done iron + copper many times + of course "plastic" drain pipes. her funds are minimal so looking into the MUCH CHEAPER glued "plastic water lines + of course like anything it must be done correctly using 3/4 plastic to replace 1/2 copper will get similar pressure to new 1/2 copper. there are many options depending on $$$$ as usual.
 
I would leave the old galvanized pipe in... and just run new pex where possible.

Old grade school had boiler heat, problem was it was out in the country and they used well water in it..... it failed and scale buildup all over the steam pipe system.

They simply left the old pipes, and installed all new pipes with the new boiler.
