Because 10W-30 has more base oil and less viscosity index improvers than 5W-30.

More meat and potatoes. That makes SAE 30 Tri-Tip !

In this age when almost all SN oils are semi-synthetic, this is no longer true. 5w-30 is is more likely to have more Group III+ than 10w-30, and maybe even some Group IV.
