Puruvian food

Were 110 miles from springfield missouri. Closest town 20 miles good for chain and local diners.
NICE menu. I would say the choice is yours. I would stick with a protein that you know, and chose a flavor you can relate to - to start to see how you like it. Or just chose a couple things that you think you might like and dig in.

I do like Peruvian sammiches.
 
Ceviche is good if you like sushi.
Ceviche does not have rice like sushi. Raw fish is sashimi. Ceviche is marinated, raw or rather cured* or cooked, cubed fish bites mixed with onions, lemon/lime, and chili peppers. Ceviche is my go- to meal off the back off a truck by the beach when I spend time in Costa Rico.

*Cured thanks to the use of lemon/lime juice that chemically "cooks" the fish protein.
 
I "grew up" near the Commercial Street district in the 1960's. We lived near the stockyards while I was in high school. It is good to see that there somewhat of a revival going on there. Will try to go eat there next time I am in Springfield.
