NICE menu. I would say the choice is yours. I would stick with a protein that you know, and chose a flavor you can relate to - to start to see how you like it. Or just chose a couple things that you think you might like and dig in.Were 110 miles from springfield missouri. Closest town 20 miles good for chain and local diners.

Ceviche does not have rice like sushi. Raw fish is sashimi. Ceviche is marinated, raw or rather cured* or cooked, cubed fish bites mixed with onions, lemon/lime, and chili peppers. Ceviche is my go- to meal off the back off a truck by the beach when I spend time in Costa Rico.Ceviche is good if you like sushi.

Chewy?I've had it when I was there in 2012. Was interesting enough.

When we eat rat I get the white meatI don't recall it being chewy, maybe if it was overcooked. The meat was pretty dark.
