Pick the oil for my hellcat

Have some Quaker State euro 5w40 and castrol euro 0w40 on the shelf. Any preferences?

If you plan on using both in the car eventually, use 0W40 when you expect to start and or drive in colder weather.

i don't think your car could notice any difference between either product, unless you were driving in intense sub freezing temperatures

Either will be fine, I agree with @skyactiv, if you are planning on driving in cooler weather might as well use up the 0W-40 for that.

Congratulations on the new Charger nice vehicle. For the Charger I would used Pennzoil Platinum 0w20 that should be more than enough for it . Stellantis is still using Pennzoil as a FF I believe

I do believe they are. The Dodge dealership I bought it from features Pennzoil as their go-to oil for service.
