Engine oil never gets hot- changing to 5w20

Don't switch to a 20w in that Nissan Villager.
Get a new thermostat if it is original. This might improve the oil temp situation.

Peak oil temp is something to consider. Warm the vehicle up completely and find the biggest hill. Stop on the bottom and accelerate to the top and THEN check your oil temp. Don't be surprised if it is in the 200s.

Also, water evaporates at room temperature. If you really want to use the 20wt oil, install a good oil cooler or increase the sump capacity/larger filter to give more headroom to prevent thermal runaway. Practice frequent change intervals if you don't want to use a synthetic.
