There's some movement to eliminate butchers from the employment chain in cut meat distribution. Some regions never had delis ..they sell all pre-packaged cold cuts.

We still have butcher shops like mori describes. Quite a few in the city (Phila) ..but the deer hunting crowd and the still viable farming community manage to allow a few full service places to thrive.
 
Three butchers in this town (one who we see buying his personal meat from Woolworths), two sell deli meats, one sells bread milk, and newspapers.

Best one is in the township adjacent to one of the power stations that I work at. They supply the majority of the restaurants in the district, and even export some. They sell vacuum sealed deli meats, pre-prepared seafood etc. Also have a wide range of sauces and marinades (including some Oz native ingredients), and free range eggs.

They are incredible. If you say the you want a small lamb roast, they'll cut off leg chops until it reaches your desired weight, make ultrathick T-Bones, prepare stir fry strips from any cut you pick. Great service, and great prices.

BTW, I loathe the delis in supermarkets. They are a necessary evil, but the kids there don't know squat about handling food.

They wear their plastic gloves, and change them each customer, but think nothing of handling raw chicken, then the seafood, then the cold cuts.

I ensure that I order my goods from good to nasty.

The gloves, I have noticed here, are for protecting the food handler.
