Stinking shame the Dealer can't get it right.
I've a customer that has a 1200 HP+ CTSV and a CTSV Wagon, too.
He comes to me because I care.
Liability has a great deal to do with my caring. But I care.
Feel sorry OP. I'd not be happy.
You are the victim of current American values.

In all likelihood, if the oil pressure light didn't come on, the engine was not starved of oil at any point in time. Oil starvation from low oil level is most likely to occur in very hard cornering as the oil sloshes around, and at high rpm when the oil pump is flowing oil at such a high rate that the level in the sump drops. If you took it easy on a 20 miles drive, I would suspect that the engine is fine.

If you look into the design of the oil pan and the oil pickup, you'll get an idea of how likely it would be for the oil pickup to start sucking in air with only 5.5 quarts in the sump.

I would cut the oil filter open to look for signs of metal, and send the oil to a lab for analysis. This will either give you peace of mind, or evidence to present to the dealer (or courtroom), depending on the results.

It's got 1500 miles on it, what do you expect to find? Of course there will be a bit of glitter in there. It has a HUGE sump b/c it's meant to take on the track/keep the oil cool. If this was me, I'd just get it sorted and make sure the repair order clearly stated what happened so you have a record of it and get on with my day.
 
I DIY but have used dealers before for various reasons. I always would come out to my car, pop the hood, and verify the oil level etc. b/c folks screw up at a job where speed is incentivized.
You give too much credit the the "Dealer".
When you pay top dollar for "Dealer" Service you should not have to 2X check that
the service was done correctly.
I can't imagine the average person to check wheel torque or fluid levels after being
charged, well above average, for a simple oil change.

I don't give too much credit, I always verify so I don't have to come here and post about my car being low on oil. Even the shop I completely trust to work on my VWs, I always get home, get under it, and check it all b/c that's good insurance. You are correct, I feel bad for the average person here...like a buddy's son who was driving back to college and his wheel fell off from lug nuts not tightened. Not me/my family.

You seem very passionate about the subject.

I'm a 100% DIYer, through, and through. Unless I experience a catastrophic failure, I don't see the dealer, and the dealer doesn't see me. When I'm out of warranty, the dealer never-ever sees me. Oh, if it's a recall, then I make sure to ask which tech performs the repair. I don't trust shops these days, and have not, for many years, for good reason.

I know the guy who changes my oil and he’s easily distracted so I always check. It’s me, I change my own oil 🤣

But as others said, that 10qts is to ensure there’s always oil at the pickup and to help control oil temperature when subjected to track use. If you weren’t driving like you were qualifying for NASCAR it’s fine. If I was into gambling I’d bet that any abnormal conditions like high oil temp or low pressure even briefly will send that car into a limp/reduced power/protection mode.
 
The oil filter probably contains 1/2 quart oil and the oil galleries throughout the engine plus whatever pools under the valve cover is maybe another 1/2 quart. If you just had 2 quarts in the engine you would be ok although the oil would get hot pretty quickly. There are plenty of posts online where people have had to add 2 or 3 or more quarts of oil to an engine and those only hold 5 quarts.
 
I know how much oil my cars use and how much I put in but I still check the dipstick. Honestly, I really don't need to though.... For a dealership tech who changes oil on 10+ cars a day, they learn how much oil different models take and I'll bet they don't need to check the dipstick. In your case, it's a "special" version with a different requirement. People make mistakes and the dealer even owned up to it.
