Forgot to say ... usually an oil pump will be in pressure relief/bypass near redline, even with hot oil. Only way to know is to take the engine up to near redline and hold it there for 30 sec to let the pressure stabilize. 70 PSI is the highest I can ever get on my Z06, so I'm taking that is the max oil pressure the pump can put out after the filter when it's in pressure relief mode.
Theoretically, if you had no oil filter on the engine, you would still see the same oil pressure if the pump was not in pressure bypass; that's because the same oil volume is still going into the engine (ie, none is being bypassed back to the sump). As you said (and I agree), the oil pressure is a direct indication of the oil volume going into the fixed resistance of the engine's oiling circuit. A filter is essentially "invisible" to the oil gauge located after the filter unless the oil pump is running at the maximum oil pressure output.
So if I see 70 PSI with Filter A at near redline, but see 65 PSI with Filter B near redline (both with same oil at same oil temp), then Filter B is more restrictive by 5 PSI than Filter A. But if the positive displacement oil pump is not in relief mode, then both Filter A and Filter B will show the same exact oil pressure at the sensor after the filter, because no oil is being bypassed by the pump ... it's all still going through the filter & engine.

Ecores or Classics? I use the 52 classics in my Equinox and they work great. Never any issues
