The weather was warm and I drove a lot on the highway, 5000 miles in a month

2021 Toyota Sienna with 2.5L Dynamic Force hybrid.

@OVERKILL You were right, I've been having fuel in the oil all these years. Blackstone kept me blind. I don't get it man, I drive a ton

There isn't really anything you can do about it. 7.8 isn't super low, so if you are OK with that visc, just keep doing what you are doing. If you aren't, stepping up to an xW-30 is probably a reasonable option to keep visc where you want it to be.
Well I made it to 200,000 miles with 6.5, so viscosity hasn't been an issue. I think I'm going to have to change my habit of idling

Toyota has done some serious wizardry with this motor, I hope that wizardry includes some protection against fuel
 
Your engine oil temperature is too low. It just cannot get there for two reasons:
1. In the city, you will run on battery a lot.
2. On the interstate, well, it is Toyota, they tend to run colder. One of the solutions could be to get thermostat with higher temperature, if it exists.

As a solution, there is none. You could bump the viscosity, but I would be careful. Those engines start on demand, and you don't want thick oil going from 0 to 3000 rpm. In this case, thin is good. As @OVERKILL stated, your KV100 is not that bad for 0W20. You could try some thinner 0W30 or 5W30 if not in a cold environment. Pennoil Ultra Platinum 5W30 would be a good choice as KV100 is just on the border to be 20 grade.
