240F oil and 246F coolant temperature I believe, I could be a little off. I was looking into that engine over the winter and there are a few good videos floating around referencing it.
245f oil going up a mountain with a trailer.. and it didnt get low oil pressure until 600rpm idle afterwards.
of course a thicker oil would fix that..
however if you arent beating it up a mountain with a heavy trailer the thicker oil is IMO optional (and I'd run it)
but it is nice to break 20mpg in a full size truck too.. and as long as the oil temps are under 230f 0w20 not likely an issue.
although I'm not familiar with how much these dilute or shear the oil.

I would want at least a regular 30wt (non euro)

at 250f your 40wt is now as thick as a 20wt at 212.
 
PUP 0w-20 will serve you well, after a bit of break in period the PUP 5w-30 would work fine also in summer months.
