With all the engine issues why do people continue to buy Hyundai’s and Kia’s

I just traded one in (2017 Hyundai Santa Fe XL). It retained 53% of what I paid after almost 7 years. So much for "poor resale value" argument.
Totally different car market now then it was 7 years ago...your residual value had nothing to do with the fact that it's a Hyundai.
 
I'm still happy with my Forte after more than 3 years. Great gas mileage, nice styling, good interior, AC, etc. The Nu engine has MPI, and no turbo. The oil is super easy to change. The dual-mass flywheel and the quirky clutch are still my only real gripe with the car. I did look at Honda, but I wanted a simple car. The Fit was neat, but cost more with the 1.5L that had fuel dilution issues. Even the Mitsubishi Mirage was even more expensive than my Forte, and I got an extra cylinder.

No it does. The resale value is what it is regardless-it's the point in time you trade it in that matters. The resale value will of course be differ depending when you trade. It's a strong market-so it's higher, on just about any car.
