I'm making an enchilada casserole. Mixed together diced up chicken, oniooooooooooooooon, freshly roasted hatch green chiles (the guys were roasting them in the grocery store parking lot), black olives, cheese, and diced up corn tortillas, with a can of cream chicken soup and mushroom soup. Bake at 350 for an hour. Top it off with shredded lettuce, avocado, tomato, and soap.....I mean cilantro.
